Since I've been asked to compile a list after the suggestion I'll be putting the known races together here. This list does not limit you to any other creation you can make, just because Rodian or Cardassians aren't listed doesn't mean they're not playable. The races below are the ones that are known to the general public and are the social norm for the Citadel.
Asari
The asari, native to the planet Thessia, are often considered the most powerful race biologically in the galaxy. They are known for their elegance, diplomacy, and biotic aptitude. A mono-gender race, the asari are distinctly feminine in appearance and possess maternal instincts. Their unique physiology, expressed in a millennia-long lifespan and the ability to reproduce with a partner of any gender or species, gives them a conservative yet convivial attitude toward other races. A typical asari individual has a blue to purple complexion, some asari can also have a teal complexion, but this seems to be a rarity. In the place of head hair, asari possess semi-flexible, cartilage based scalp crests that grow into shape. These structures are rigid, and do not "flop around" as some believe. Asari also have a robust cellular regenerative system; while they do not heal faster than other species, they are known to reach over 1000 years of age. Asari blood is purple. In 2243 the Twi'lek came in contact with the Asari and have since built a society around one another.
Human
The humans of this reality are thought to be native to Earth. They are versatile creatures that are ego driven and head strong yet they are very loyal to their causes. Humans have a nack for trying until they die and in most cases they die. In the last 500 years humans have unlocked the wonders of the galaxy becoming biotics, mages, and all the like. In later human times Vampires and many other unnatural creatures became a social norm and while they continue to remain out of public eye, they are known by the general population.

Klingon
Klingons possess a very robust and enduring biology as well as large and muscular statures. Their anatomy is redundant and supernumerary; every organ has a backup, including extra pairs of lungs, kidneys, an extra heart, and even a secondary brain stem, as well as an extensive and hardy skeletal structure. The Klingons adhere to a strict code of honor, similar to feudal Mongolian or Japanese customs. Their society is based on war and combat; ritual suicide is often preferred over living life as a crippled warrior, and may allow a warrior to die with honor. To be captured rather than killed in battle brings dishonor to not only the captive but his descendants. Death is depicted as a time for celebration, not grief. Klingons are depicted as a spiritual people. According to their legends, Klingons slew their own gods.
Miraluka
Though sharing a common genetic history with the Humans, Miraluka have evolved into a significantly different species, evidenced by the fact that they are born without eyes. On their homeworld of Alpheridies, the only source of light is a red dwarf star which emits light only in the infrared spectrum. Over the centuries, the Miraluka have adapted and developed the ability to see their surroundings through the Force. Miraluka wear decorative veils to conceal their vestigial eye sockets for social reasons, and generally have little trouble assimilating into human society.
Turian
Originally from the planet Palaven, turians are best known for their military role, particularly their contributions of soldiers and starships to the Citadel Fleet. They are respected for their public service ethic—it was the turians who first proposed creating C-Sec—but are sometimes seen as imperialist or rigid by other races. Although life on Palaven is carbon-based and oxygen-breathing, it is built on dextro-amino acids. The food of humans, asari, or salarians (who evolved in levo-amino acid-based biospheres), will at best pass through turian systems without providing any nutrition. At worst, it will trigger an allergic reaction that can be fatal if not immediately treated. The turian homeworld, Palaven, has a metal-poor core, generating a weak magnetic field and allowing more solar radiation into the atmosphere. To deal with this, most forms of life on Palaven evolved some form of metallic "exoskeleton" to protect themselves. Their reflective plate-like skin makes turians less susceptible to long-term, low-level radiation exposure, but they do not possess any sort of "natural armor".
Twi'lek
Twi'leks are an omnivorous humanoid species originating from the planet Ryloth. Their distinctive features include colorful skin, which varies in pigment from individual to individual, and a pair of shapely prehensile tentacles that grew from the base of their skulls. The tentacles, called "brain-tails," "lekku," "tchun-tchin," or "head-tails" are advanced organs used for communication and cognitive functions. Twi'leks are often used as slaves, the females primarily as dancers because of their beauty. In 2243 the Twi'lek came in contact with the Asari and have since built a society around one another.
Vasari
The Vasari were once part of an ancient empire that was destroyed by an unknown threat that sent them on the run. The rate of expansion of this unknown enemy was astonishing, far exceeding even that of the entire Dark Fleet. Vasari fleets make use of enforced labor to further the needs of their empire's growth. It wasn't until very recently that many Vasari began working in cooperation with the other races, and gave up on using slavery as a primary means of production.
Vulcan
Vulcans are depicted as similar in appearance to humans. The main physical differences are their eyebrows and ears: the former are arched and upswept, while the latter feature pinnae which taper to a point at the top. Vulcans are about three times as strong as an average human, owing to Vulcan's higher gravity although their durability is equal to humans. There are instances of them living over two hundred and twenty years. Vulcans are capable of experiencing extremely powerful emotions (including becoming enraged enough to kill their closest friend); for this reason, they have developed techniques to suppress them. Many Vulcans are contact telepaths. A "mind-meld" is a technique for sharing thoughts, experiences, memories, and knowledge with another individual, essentially a limited form of telepathy.
Zabrak/Iridonian
A humanoid species that live on the harsh planet Iridonia. Independence, confidence, and fierce determination characterize the Zabrak psyche. Most Zabrak do not consider any challenge impossible, no matter how unfavorable the odds, and look down on the weak who fear defeat. A tradition of intense martial training, a second heart, and resistance to physical pain make them exceptional warriors and explorers. Zabrak are distinguished by their vestigial horns and hallmark facial tattoos. Horns develop as individuals come of age and tattoos are received during a ceremonial rite of passage that occurs soon after they appear. These tattoos vary in design based on the individual’s own trials and experiences. Zabrak from Iridonia are renowned for developing strict regimens of martial training, and the discipline and perseverance they teach are instilled in all young Zabrak.
